Description

Ingredients

  • 4 small chicken breasts (about 1.5 pounds)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon butter
  • 1/2 cup finely chopped onion (about half of a small onion)
  • 2 jalapeños, seeded and diced
  • 1 teaspoon minced garlic
  • 1/4 cup heavy cream
  • 1/3 cup chicken broth
  • 2 ounces cream cheese
  • 1 cup shredded cheddar cheese, divided

Instructions

  • Season the Chicken
    Mix cumin, chili powder, garlic powder, salt, and pepper in a small bowl. Sprinkle this seasoning blend over each side of the chicken breasts.
  • Sear the Chicken
    Warm a large skillet over medium heat, then add the butter. When melted, place the chicken breasts in the skillet, ensuring they don’t touch. Cook each side for 2-3 minutes until nicely browned. Remove and set aside.
  • Sauté the Vegetables
    In the same skillet, add the onions and jalapeños, cooking until soft, about 3-4 minutes. Add the garlic in the last minute for a burst of aroma.
